Mint Chocolate Chip Smoothie

This tastes just like ice cream, but better! Nothing is more awesome than the heavenly, candied flavor of mint + chocolate. Bonus: this is naturally green hued from the kale and spinach.
Gluten Free, Nut Free
Makes 16-20 ounces
½ cup canned lite coconut milk
½ cup plain probiotic yogurt
1 peeled banana, broken into chunks
1 cup spinach
1 cup kale
1/2 teaspoon vanilla extract
1 teaspoon mint extract
3 tablespoons chopped dark chocolate or chocolate chips
2 tablespoons honey or agave
½ cup crushed ice
- Add the coconut milk, yogurt, banana, spinach, kale vanilla extract, mint extract, chocolate, honey or agave and ice to your blender container.
- Blend on high until smooth and fully combined, at least 25 seconds. This smoothie tastes better when it’s thick, so you might need to add more ice.
- Pour into a glass and add chocolate shavings on top. Serve immediately.
Blending Tip Most smoothies taste best when you blend them with ice. It helps the texture and the taste. If you prefer to not use ice but like the frozen element, you can always slice and freeze fruit to be used in your recipe ahead of time. Frozen fruit will create the same effect as ice.
